Fred Bueltmann from New Holland Brewing and John Freyer from Dogfish Head Brewery will be presenting 8 flights of Beer and Cheese at the Friday night Meet the Brewers and Cheese Maker Party. The pairing event will also be accompanied by Derick Rosinsky from International Imports a cheese aficionado.

The pairings will feature the following flights:

  • FLIGHT ONE - New Holland - Full Circle A Kolsch, golden, top-fermented style native to Köln, Germany. The style has a very narrow profile and many beers that consider themselves to be kölschbiers are not. Generally they have a moderate bitterness, but fairly prominent hop flavor (typically Spalt, Tettnang or Hallertau). They have high effervescence, medium esters, but a rounded, stylish character derived from lagering. Paired with Chistou Istara.
  • FLIGHT TWO - New Holland - The Poet – A Sweet Stout, dark brown to black in color. Sweet stouts come in three main varieties - milk stout, oatmeal stout, and foreign stout. Milk stouts are made with the addition of lactose, and are sweet, low-alcohol brews. Oatmeal lends a smooth fullness of body to stouts, while foreign stouts are stronger (6.5-8% abv) and have a sweet malt profile and high esters. All of the sweet stouts are noted for their restrained roastiness in comparison with other stouts, and low hop levels. Paired with Fromager d’ Affinois.
  • FLIGHT THREE - New Holland - Dragons Milk –An English Strong Ale, malty, with complex fruity esters. Some oxidative notes are acceptable, akin to those found in port or sherry. Hop aromas not usually present, due to extended age. Medium amber to very dark red-amber color. Malty and usually sweet. Alcoholic strength should be evident, though not overwhelming. Medium to full body; alcohol should contribute some warmth. An ale of significant alcoholic strength, though usually not as strong or rich as barleywine. Usually tilted toward a sweeter, more malty balance. Often regarded as winter warmers, and often released as seasonal beers. Paired with St. Petes select Caved Aged Blue.
  • FLIGHT FOUR -New Holland - Golden Cap – A Saison, fruity esters dominate the aroma. Clarity is good with a large foamy head on top. The addition of several spices and herbs create a complex fruity or citrusy flavor. Light to medium bodied with very high carbonation. Alcohol level is medium to high. Paired with Widmers Brick
  • FLIGHT FIVE - Dogfish Head - Festina Peche A Berliner Weiss, very wheaty, very sour style of Berlin. Berliner weissebier has a barely perceptible hop content, low alcohol, and a sharp character. Often these are laced with syrups to cut the intense acidity, but purists will want to take them neat to enjoy the multi-faceted complexity and thirst-quenching character. Paired with Nazareth Swiss.
  • FLIGHT SIX - Dogfish Head - Raison d’ etre – A Belgian Strong Ale, a deep mahogany ale brewed with beet sugar, green raisins, and Belgian yeast. As complex as a fine red wine. 36 IBU - available year round, 12 ounce bottles & draft - Descriptors: Notes of pit fruit, decadent, winey, raisiney, malty. Paired with Carr Valley Coco Cardona.
  • FLIGHT SEVEN - Dogfish Head – 60 Minute – An India Pale Ale – An India Pale Ale which gets its name from strong pale ales first brewed in the 1780s by George Hodgson and exported from London to India. The style was taken up by Burton and Edinburgh brewers who termed it Burton Ale and Edinburgh Ale respectively. In Britain the style eventually developed into Premium Bitter, though the name itself has been increasingly used by British brewers for moderately hoppy low abv session bitters. The IPA name was taken up by American brewer Bert Grant in the late 1970s who used modern American hops to produce a modern slant on the style which has proved very popular, and is now the dominant IPA style. This style has an intense hop flavor and aroma. Paired with Kings Island Aussie Cheddar.
  • FLIGHT EIGHT - Dogfish Head – Red and White – A Belgian Strong Ale, a big, Belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in Oregon Pinot Noir barrels, and another fraction is aged on oak staves. The beer is blended together before packaging. It successfully marries the refreshing citrusy qualities of a Belgian-style white beer with the robust complexity of a bold red wine. Paired with Gorgonzola verde dolce.

In addition to the Pairings there will be 16 world class draught beers will be on tap all evening along with a food menu a la cart.

Live Bluegrass Music from Above theTown will round out the festivities until 11 pm.
